A cheaper and nutritious alternative produced using different mixes of cassava and soy flours was developed in Zambia. | Stage Description | The nutritional and anti-nutritional properties were analyzed with standard laboratory methods. A structured questionnaire was used to analyze consumer preferences. The results showed that high-quality cassava flour fortified with high-quality soy flour could be used as a cheaper alternative to wheat flour in the production of nutritious and acceptable fritters. |
