Innovation TitleRecipe for the production of nutritious cassava-based snacks
Innovation description Fritters are flour-based snacks made from wheat flour. A cheaper and nutritious alternative produced using different mixes of cassava and soy flours was developed in Zambia. The analysis of consumer preferences showed that these snacks can be suitable for the national market.

Stage DescriptionThe nutritional and anti-nutritional properties were analyzed with standard laboratory methods. A structured questionnaire was used to analyze consumer preferences. The results showed that high-quality cassava flour fortified with high-quality soy flour could be used as a cheaper alternative to wheat flour in the production of nutritious and acceptable fritters.
